Bachelor Programme
BA (Hons) Culinary Arts - TU942
TU Dublin's honours culinary degree (64 places) is taught in the professional kitchens and restaurants of the Grangegorman campus and pairs hands-on cookery with academic study. Early years cover professional cookery, larder and meat technology, pastry, food safety, culinary science, nutrition, food and beverage studies, wine and the history and sociology of food, with national internships in Years 1 and 2. Third year adds major hot kitchen, pastry or larder specialisms, cost accounting, sustainable food concepts and a food and beverage management immersion, plus an international internship and an Erasmus option. Final year focuses on food entrepreneurship, innovation and sustainable product development, with options such as artisan foods, molecular gastronomy, advanced pastry, bread-making and wine, and a dissertation or capstone project. TU Dublin advises against the course for anyone with a medically diagnosed food allergy.
